The Coquerrois are typical patties of Mallorca, there are two types, one with vegetables and another with onions. |
- 250 gr of flour
- A pitch of butter
- 1 cup of oil
- 1 cup of water
- Pine nuts
- 2 piles of spinach
Wash carefully the vegetables and cut them into small pieces, then mix them with clean raisings, oil, salt and pepper (it is important that all the vegetables are well cut).
Dough: mix the flour, water, butter and oil until the dough is uniform.
Coquerrois: take a portion of the dough and shape into a circle with it, add the vegetable mix on top and close the dough forming half a moon with it. Use a fork to embed the typical outlines of the Coquerrois. Do this with the rest of the dough.
Cook all the Coquerrois in an oven for 20 minutes, at medium temperature.
