“Pan Moreno” is the traditional bread of Mallorca. In the beginning, a long time ago, the only bread of the city was this kind of bread.|
To make the Sour Dough: mix the ingredients making a ball, reserve the combination wrapping it with a humid cover, and let it rest.
- “Masa Madre”- (sour dough)
- 50 gr of flour for the “Pan Moreno”(you should ask for the special kind of flour used to make this bread)
- 50 gr of water
- 5 gr of yeast
- The rest of the dough
- 600 ml of water
- 400 gr of flour for “Pan Moreno”
- A pitch of fresh yeast
- A pitch of salt
Mix all the ingredients with the fermented sourdough and knead with your hand; once it’s all correctly blended and compact, form another ball with it. Cover it again for natural fermentation, you will know it’s ready when it starts to crack on top.
Finally, preheat the oven to 230 degrees, and cook it for about 20 min.
